Cooking Ideas
Thaw slowly in the refrigerator, then grill with garlic and butter, poach briefly in salted water, or split and stir-fry over high heat. The shell keeps them juicy, so cook them fast and stop as soon as the flesh turns opaque. The heads make an excellent stock.
Storage & Handling
Keep at -18°C or below. Thaw in the refrigerator, never in hot water. Cook within 24 hours of thawing and do not refreeze. Reseal the bag after opening.
