Cooking Ideas
Score the body lightly and deep-fry until the fins turn crisp and the skin blisters. Equally good pan-fried and finished with a soy, sugar and vinegar glaze, salted and grilled, or poached in a light broth. Thaw in the refrigerator first and pat dry for a crisp skin.
Storage & Handling
Keep at -18°C or below. Thaw in the refrigerator and cook within 24 hours. Do not refreeze. Reseal the pack firmly after removing what you need.
